Recipe:

Separate bowl, beat eggs

Add salt (and pepper) as desired

Mix potatoes and eggs together

Pour into a frying pan with flat bottom and equal sides (with oil to prevent sticking)

Once bottom is cooked and top is almost solid, FLIP, using lid or a cooking sheet to balance it on.
